best beet salad ever

As my friend Josee says, "There's nothing worse than food that wasn't made with love." And so, I try really hard not to cook with hatred, but sometimes I can't help it. Like, undoubtedly, when I bake, I curse like a sailor and threaten suicide while mixing flour and sugar and eggs by hand. It hurts my arm and takes way longer than it should.
Anyway, the point is, beets are messy. The avocado slipped out of my hand and went flying onto the floor, and for some reason, I got goat cheese in my hair.
But if you're not a spaz, this recipe rocks. The sweetness of the beets and dried cranberries, the bitterness of the arugala, mixed in with the creamy textures of goat cheese and avocado, and a crunchy kick from the toasted walnuts = a happy palate.

  2. Amazing. I can totally picture myself doing everything mentioned in this post, except add two hungry, tall dogs to the mix and just imagine lots of the ingredients being stolen off the countertop when you turn your back. Awesome.

  3. effin hysterical. please tell me you've read or seen "like water for chocolate" - that scene when she cries into the wedding soup as she prepares the feast for her beloved's marriage to her horrid sister, and therefore causes all the wedding guests to inexplicably burst into tears after the first taste...it's one of my favorite culinary moments in literature.

    i try not to cook with hatred, too, which is why i stopped making beets, but i might have to reconsider. this looks righteous.

    and i always feel like i've accomplished something at the end of the evening, when my hands are stained a lovely "beet red"...
